2.3. Sample analyses
As it was described on Section 2.2.1, for each treatment
(Table 1) and storage condition (Day 0 and Day 45), six
samples were processed: half of them were investigated
for drip loss, expressible moisture, Warner Bratzler Shear
Force and colour parameters, while the others three were
submitted to microbiological analysis.
All frozen samples were thawed in a walk-in cooler during
12 h at 5 C before analysis, with the exception of
R + ABF + HP and S + ABF + HP, where colour parameters
were also measured before sample thawing
