2.4.1. Kinetic data analysis
To describe the changes in colour and total carotenoids during
storage, zero-order (Eq. (4)) and first order kinetic models (Eq.
(5)) were used. The selection was made based on a visual inspection
of the model fit and on the coefficients of determination
(r2
adj). The temperature dependence of the rate constants was determined
by the Arrhenius equation (Eq. (6)). All kinetic parameters
were estimated by regression analysis using SAS software (SAS
9.3, Cary, NC).
