The dependent variables used in this analysis have been previously described in the survey design. By calculating the average of the coded 5-point Likert Scale responses, an overall NEP score was
attained. A high score (3.5–5.0) indicated higher ecological sensitivity. The same technique was employed with items related to
environmentally sustainable behaviours (composting, recycling,
using one’s own shopping bags when purchasing groceries, and
minimising food packaging), and food preparation behaviours
(food decisions, food preparation and cooking, setting the table
and cleaning up after a meal, and helping to store leftovers). An
average score was assessed for each respondent. For environmentally sustainable behaviours, a high score (3.5–5.0) indicated frequent engagement in these behaviours. For food preparation
behaviours, a score above 2.5 indicated frequent involvement. Finally, the survey items regarding the frequency with which individuals ate a variety of food establishments, as well as items
regarding money spent at various establishments, were each totaled and run as continuous variables.
