Conventional and organic cinnamon and peppermint were investigated for their phenolic profile,
anti-proliferative, anti-inflammatory, and antioxidant properties. Accelerated solvent extraction with
75% acetone was used to extract samples. Caffeic acid was the most abundant phenolic acid in peppermint.
