The addition of passion fruit albedo seems to be a technologically
viable alternative for elaborating fresh meat products, such as burgers,
because the “natural” and “healthy” image of these products, by the
consumers, could be improved. Additionally, the incorporation of passion
fruit albedo on pork burgers improves the cooking characteristics
such as: yield, diameter reduction, thickness increase and fat and moisture
retention. According to the results obtained, 2.5% of passion fruit
albedo addition can be recommended in pork burger production as a dietary
fiber source.
