Conclusions

Determination of colour parameters, antioxidant activity and total phenolics content of selected samples of Polish honeys showed differences in the above-mentioned parameters in different honey types. Dark honeys (buckwheat, honeydew, heather) showed the highest antioxidant activity as well as total phenolics content, while pale honeys (rape, acacia, lime) demonstrated the lowest values of these parameters.

Filtration was found to lead to insignificant changes in values of the analyzed parameters: honey samples were brighter, had a lower antioxidant activity and a higher total phenolics content as an effect of filtration.

The study showed that the type of honey had a greater influence on these parameters than did the filtration. It can be said that the process of filtration conducted under controlled conditions should not affect the quality of honey, especially its antioxidant activity.
