2.3.2. Porosity analysis
A preparation procedure was established to assess the distribution
size and number of cells gas formed during proofing. After a
thawing step (frozen sweet doughs) or mixing for fresh dough,
disks of dough were placed in Petri dishes during 180 min of
proofing (Fig. 1A). The images were acquired using a flatbed scanner
(HP Scanjet G4050 Photo Scanner) with a resolution of 4800
9600 dpi, and images were saved as TIF
