Abstract
The manufacture of canned tuna industry has been processed through quite high amount of water power, particularly in the process of cleaning and scraping off all fish during the lunch break and after the shifts. Therefore, the work process needs to be improved in order to have more efficiency. However, both the use of water and the time of manufacturing process affect the whole cost of production. This co-operative education project aimed to (1) investigate the way to reduce at least 20% of water consumption for washing, scraping the fish after the shifts, and (2) find the means to decrease the amount of time spending on the process of cleaning and scraping off all the fish during the lunch break and after the shifts. The data were examined, collected and analyzed to be guidelines for the improvement on the operation procedure of QC Story. The study results in water consumption and the sepending time on the process of cleaning and scraping off all the fish during the lunch break and after the shifts revealed that 43.09 litres/line/day of water on average and 36:56 minutes of manufacturing process were used at noon. It can be seen that water and time consumption were over the determined standard of the company, 30:00 minutes. After the shirts, 2,641.28 litres/line/day of water on average and 76:34 minutes of the spending time were applied. In the other word, the spending time was more than the standard time of the company, 60 minutes. Thus, the improvement way at noon is to increase the number of employees in some steps. In terms of the process after the shirts, there are two guidelines for development: (1) to use the low-pressure water injection machine instead of the nude hose and nozzle brass, and (2) to change the method of water injection water from standing to water to having water injection along the production line. These aforementioned guidelines can decrease from 36:56 to 29:25 minutes of manufacturing process time during the lunchtime, from 62:36 to 76:34 minutes after the shirts. Regarding the water consumption, the amount of water wasting has been reduced from after the shifts and from 2,641.28 litres/line/day to 322.28 litres/line/day, considered as 87.80% of pre-improved water amount. As a result, the expenses of the company's water production can be reduced for 27,752.76 Baht/year. The amount of water consumed during lunchtime is 45:23 litres/line/day
