MATERIALS AND METHODS
Microbiological methods. Dilutions of brine samples
of cucumber fermentations were plated on dextrose
agar (Difco) acidified with 2 ml of 5% tartaric
acid per 100 ml to isolate yeasts and molds, on nutrient
agar (Difco) to detect aerobic nonfastidious bacteria
such as the endospore producers, and on Trypticase
soy agar (BBL Microbiology Systems) plus 1% dextrose
and 0.2% yeast extract with the pH adjusted to
-5.6 to detect more fastidious bacteria.
