The polyunsaturated fatty acids found in pulp oil were แอลฟ่า-linolenic (14.54%) and linoleic acids (8.54%). The C18:3 n-3 is the main responsible for the decrease in oil stability, due to the presence of three unsaturations and consequent susceptibility to oxidative reactions. The seed oil is mostly polyunsaturated(48.45%), especially linoleic acid (47.91%), indicating good nutritional quality as a source of essential fatty acids. Fig. 5 shows the fatty acid profile of the jatoba pulp and seed oils.
