3. Results
3.1. Microbial count
Microbial results are shown in Fig. 1. Apple juice incubated
for 48 h prior to processing had an initial microbial
load averaging 109 cfu/ml. The microbial reduction
achieved by exposure to TUV was 2.2 log cycles, while TPEF
led to a reduction of 5.4 log cycles. When the two hurdles
were combined (TPEF+UV or TUV+PEF) the overall microbial
reduction was 6.2 and 7.1 log cycles, respectively.
