The sparkling wine made by the traditional method is the result
of the second fermentation of the base wine in bottles, followed by
aging in contact with lees. During this aging the yeast autolysis
occurs, which causes the release of many important compounds
for sparkling wine quality which provide unique characteristics
to each bottle. After aging, the lees are eliminated by the disgorging
and the sparkling wine is stored until its commercialization
