no published data currently exist on the use of a chitosan coating
enriched with the natural antioxidant and antimicrobial GA to
enhance the shelf life of fresh fish. Therefore, the objective of
this study was to evaluate the potential of developing a novel
cost-effective biopreservative by combining chitosan with GA
based on their effects on the microbiological, physicochemical,
and sensory parameters of Pacific mackerel and to extend
the shelf life of Pacific mackerel fillets during chilled storage.
