The samples series was: a) HHP samples for pressure treatments;
b) unpressurized control samples maintained at the same
conditions of the corresponding HHP samples but without pressurization
in order to evaluate the effects solely from heating or
freezing; c) uninoculated reference samples prepared directly from
the pasteurized smoothies and pressure treated in the same
manner as the HHP samples to verify the complete absence of
autochthonous microbiota.
