described. Alsoinvestigatedwastherelationshipbetweenthenumbersofmicroorganismsandthe
amount ofvolatilecompounds.Thison-packageindicatorcontainstwogroupsofpH-sensitivedyes,one
of whichisamixtureofbromothymolblueandmethylred,whiletheotherisamixtureofbromothymol
blue, bromocresolgreenandphenolred.Carbondioxide(CO2) wasusedasaspoilagemetabolitebecause
the degreeofspoilagewasrelatedtotheamountofincreasedCO2, andwhichwasmorethanthelevelof
totalvolatilebasicnitrogen(TVB-N)duringthestorageperiod.Characteristicsofthetwogroupsof
indicator solutionswerestudied,aswellastheirresponsetoCO2. Akineticapproachwasusedto
correlatetheresponseoftheindicatorlabeltothechangesinskinlesschickenbreastspoilage.Color
