TCA, suggesting that a protein moiety is
involved in the activity. This may indicate
that the inhibition was due to the presence
of bacteriocin-like substances. The
antimicrobial substances showed high
thermal resistance and low molecular
weight, which are characteristics of small
hydrophobic peptides that constitute class
II bacteriocins (Riley and Wertz, 2002
