Glucose, which was present in all cheeses after 1 day (~1 mmol/kg), was depleted below the limit of detection (0.11 mmol/kg) after 1 month in cheeses with added Lb. curvatus LFC1, while a low level (0.16 ± 0.08 mmol/kg) was detected at 1 month in the control cheeses (data not shown).
