In this study, results evidenced that the number of polymerized
units, and consequently the absolute number of heterocyclic oxygen
and hydroxyl groups present in solution, cannot be the unique
explanation for the effective behavior of grape seed extracts, since
their concentrations are clearly lower than those of pure monomers:
e.g., IC50 (grape seed extracts) ¼ 0.12e2.65 mg/L, against IC50 (flavanol
monomers)¼ 11.6e18.2 mg/L. In the following, two other factors
possibly involved in the inhibition mechanism will be discussed
