The present study was designed to investigate the effects of various
food ingredients—protein-rich components, salt, baking powder,
different types of sugar, and plant oil—on CML content.
Furthermore, the associated effects of the addition of GP, as well
as of food ingredients, on CML formation in model muffins was also
assessed as the main objective of this study.
