Our observations suggest that an addition of SH extract to the coating would have profitably affected pullulan coating structure. As was proved in the study conducted by Hoque et al. (2011), films obtained from gelatin incorporated with star anise extract showed a more compact structure as compared with the control. The more compact structure of the film resulted from the interaction occurring between gelatin particles and extract components. Apple weight losses at both temperatures were considerably lower compared to peppers and they did not exceed 5%, which may have several causes.
