The species selected for the present study was Bambusa polymorpha because it is considered as one of the best in theworld producing quality edible shoots, which have a distinct sweet taste in the raw state (Rai,2007). The newly emerged shootswere collected fromthe local bamboo nurseries as well as the local market. The collection of shoots was carried out during the morning hours as transpiration is less. After peeling off the sheath, the inner soft portion was taken for analysis and elaborating products. The inner soft tissue was chopped into pieces of 3–4 cm2 sizes and subjected to simple treatments to remove the toxic and bitter compounds.
