The antimicrobial substance produced by Lact. plantarum
TF711 was stable during storage at )20C and 4C (not
shown) and it was also heat stable, as it retained more than
70% residual activity after treatment at 100C for 30 min
(Table 2). However, heat sterilization led to its complete
inactivation. With regard to pH, antimicrobial activity was
highest when the pH of the supernatant was between 1 and
8, more than 75% activity was maintained up to pH 11; and
it was completely inactivated above pH 11 (Table 2).
Sensitivity to enzymes and surfactants are shown in
Table 3. Exposure to surfactants caused less than 30%
inactivation of the antimicrobial activity. In contrast,
complete inactivation was observed after treatment with all
proteolytic enzymes, a key criterion for bacteriocin characterization.
Additionally, the bacteriocin-like substance,
which we called plantaricin TF711, was completely and
partially inactivated by a-amylase and lipase respectively.
Finally, it maintained 100% activity after treatment with all
the organic solvents tested (not shown)
