Whereas the control samples showed whole cells, with intact
membranes and the characteristic lycopene crystals, the homogenized
samples just showed a large amount of small particles, composed
of cell walls and internal constituents suspended in the juice
serum (Fig. 3). As expected and confirmed by the PSD analysis, the
suspended particles were smaller at higher PH values, highlighting
the effect of HPH in disrupting the fruit pulp particles.
