Further, these samples showed a higher rate of developing crystals at the surface compared to the samples stored at 20 _C. Due to the size and shape of the crystals that could be seen in LV SEM images (Fig. 4) they are observed as fat bloom crystals.
No significant difference in polymorphic development could be observed between the samples after 14 weeks of storage at 20 or 23 _C. Still, it could be concluded that the CB TAGs of all samples initially were mainly in form b2V and that all samples had developed CB crystals of polymorph b1VI after 14 weeks storage at 23 _C, indicating on fat bloom development.
