Eleven strains of LAB belonging to Pediococcus pentosaceus
(n¼4), Lactobacillus casei (n¼3), Lactobacillus plantarum (n¼1) and
O. oeni (n ¼ 3) (Table 1) were selected from the bacterial culture
collection of CIAL (Instituto de Investigacion en Ciencias de la
Alimentacion, CSIC-UAM).
