The D&DO test (distance difference test) (Mullet, 1988) identifies the existence and assesses the intensity of generalized sensory differences between two or more samples and a reference (control) was used. The samples are presented to 18 assayers (13 female and 5 male) in an anonymous way according to a predeterminated experimental plan. For each tested strain and combination, the samples for the sensory analysiswere: one control (fermented milkwithout vegetable substrates), synbiotic fermented milk with 2%, 4%, 6% of buckwheat flour or oat bran
