supplementation of HME gelatinized starches with water
decreases their corresponding Tg. The Tg of corn starch powder
was detected at 56 C when stored at 45% RH. The higher the
moisture content, the lower the Tg of starch pellets was. Like water,
sucrose is reported to act as a plasticizer (Arvanitoyannis et al.,
1997). To predict the plasticizing effect of sucrose on extruded corn
starch, the Gordon-Taylor equation (Hancock and Zografi, 1994)
(Eq. (3)) was used to calculate the aforementioned temperature
lowering trend (Fig. 5).
