2.5.2. Essential mineral content
Essential mineral contents [phosphorus (P), potassium (K),
magnesium (Mg), calcium (Ca)] in the fried samples were determined
by using atomic absorption spectroscopy (SpectraAA220,
Varian Company, USA). All analyses were run in triplicate for the
sample of each substitution level. Results are expressed as mg/100 g
oil-free dry basis.
