In recent years, due to the changes in consumer preference towards natural products with functional properties, the use of sea buckthorn berries as a natural food ingredient has been increasing. Sea buckthorn contains a large variety of substances which are possessing strong biological activity. The berries are especially rich in vitamins and flavonoids, both of which are natural plant pigments . Carotenoids are among the most common natural pigments, and more than 600 different compounds have been described by now, out of which β-carotene is the most significant. These compounds possess biological functions in plants and exhibit preventive effects in animals and humans against major disorders like cancer, cardiovascular diseases, arteriosclerosis, macular degeneration and other age related diseases. Carotenoids are highly conjugated, and intensely coloured isoprenoid plant compounds, which are unstable when exposed to light or oxygen and therefore should be protected during processing. Encapsulation has found numerous applications in food and pharmaceutical industries as coating colorants, flavors and othernbioactive ingredients in an effort to increase their shelf life.
