Hydrodynamic shockwaves (HDS) are generated
either electrically (capacitor discharge
system) or by using explosives in water.
Besides tenderizing meat products by disrupting
the myofi brillar structure (Schilling
et al. 2003 ), HDS might infl uence bacterial
counts as well, resulting in extended product
shelf life (Raloff 1998 ). Explosively produced
HDS are not commercially feasible
because it is a batch - type process, has specifi
c packaging requirements, and has potential
worker safety concerns
