The results of the PB design are shown in Table 1. The tannase activity varied from 67 mU/mL (run 9) to 439 mU/mL (run 1). The positive or negative effects of the independent variables MgSO4•7H2O, KH2PO4, yeast extract, tannic acid, agitation rate and salt solution were valued and are shown in Figure 1.
Yeast extract, salt solution, KH2PO4 and tannic acid have no statistically significant effect on tannase produc- tion (Figure 1). It was found that low concentrations of KH2PO4, tannic acid and salt solution increase tannase production, but the effects are not significant. Further- more, the results indicate that the enzyme production by
