4. Conclusion
A high purity reuterin stock solutionwas obtained from L. reuteri INIA P579, with a concentration of 1.3 M and an inhibitory activity of 510 AU/ml. According to our results, the addition of purified reuterin at 10 AU/g inhibited the growth of L. monocytogenes INIA 2530 for 15 d at 8 C and 8 h at 30 C in cold-smoked salmon. Purified reuterin may be used as an additional hurdle against L. monocytogenes in cold-smoked salmon, increasing the safety of this ready-to-eat product during refrigerated storage and under conditions of moderate temperature abuse.
