In recent years the traceability of food products has attracted the attention of many researchers for several reasons (Jansen-Vullers et al, 2003): first traceability, according to the Regulation of the European Community N. 178/2002, has become a legal requirement within the European Union from January 1, 2005; secondly, food companies tend to view traceability as a strategic tool needed to increase consumer confidence and improve the both image of the company and of a specific product.
