4. Conclusion
The colour of the peel of banana fruits was not negatively
affected by the low temperatures. In cold storage conditions at
both temperatures (13 C and 10 C), the carotenoids metabolism
in the fruits of cv. Prata were negatively affected by the low storage
temperature. This can be explained by the fact that this cultivar has
a mechanism to accumulate substrate so as not to impair the production
of other metabolites, such as the volatiles responsible for
flavour, because the degradation of some carotenoids is considered
the key to the formation of the compounds responsible for aroma.
In turn, the cv. Nanicão showed increased levels of carotenoids in
response to stress.
