On the other hand, for the same glycerol concentration, rice
flour films gave values of Kw two times higher than the rice starch
films. The comparison of the values of Dw and b1 for samples SG20
and FG20 and for samples SG30 and FG30 shows that the much
higher values of the diffusion coefficients can explain the increase
of Kw. The higher values of Dw can be explained by the more
irregular structure of flour based films, as reported by Martin-Polo
et al. (1992).
