Although longer time was needed during water immersion
heating of frankfurters in the packages, minimal
change in the dimension of samples was observed. During
water immersion heating of frankfurters, heat was more
uniformly distributed across the entire surface of the frankfurter
package. No localized heating and internal stress
occurred during water immersion heating. Therefore, no
or little change in the physical dimensions of frankfurters
was observed following the water immersion heating
