Areas where soot particles were found on the external surface of
chorizos with casing were selected for analysis as shown in Fig.5kand
l. Fig. 5k and l shows the external surface ofChN and ChS, respectively,
when casings were removed. As can be appreciated in these figures,
soot particles seem to cross the natural casing andare found when the
casing was removed (5.k). In contrast, no soot particles were found
when the synthetic casing was removed (5.l). The findings of this
study are in agreement with previous research by the authors
(Ledesma et al., 2015). Synthetic casing prevents the penetration of
soot particles and carcinogenic compounds into meat products.
