Metals such as cadmium are continuously being added to our soils through various agricultural activities such as including production and application of cadmium in various industries and disposal of waste contaminated with cadmium. All these sources cause accumulation of metals and metalloids in our agricultural soils and pose threat to food safety issues and potential health risks due to soil-toplant transfer of metals. Co-existence and persistence of heavy metals in soils as multiple contaminants and human exposure to them through ingestion of heavy metal contaminated food or uptake of contaminated drinking water can lead to their accumulation in humans, plants and animals. (Abdul., 2005) Food-borne cadmium was the principal source of exposure for persons living in the 12 cadmium- contaminated villages in Mae Sot District, Tak Province, northwestern Thailand. (1) This situation is further exacerbated in areas of known non-ferrous mineralization adjacent to rice-based agricultural systems where the opportunity for contamination of rice and its eventual entry into the food chain is high.
