DSC was performed to understand the melting behavior of rice bran
oil spreads and showed two major thermal transitions for all four
spreads. The transition at approximately –27 to 7°C corresponds to
the melting of triacylglycerols, and the other transition at 75 to 79°C
corresponds to the melting of rice bran wax. Spreads 1 and 3 showed
slightly greater heats of melting (H) for the second thermal transition
(75 to 79°C) than spreads 2 and 4, which is indicative of the
slightly higher wax levels in these samples.
