Images of the emulsions were captured using a Zeiss LSM 510 (Jena, Germany) confocal laser scanning microscope. A 0.5 mL aliquot of each emulsion sample was transferred into a 2 mL centrifuge tube before adding Nile Red and Fast Green (approximately 0.1% w/w). After thorough mixing, a drop of each sample was placed on a microscope slide (Sail, Sailing Medical-Lab Industries Co. Ltd., China). Samples were examined at l = 543 nm for Nile Red and l = 488 nm for Fast Green. Images were scanned at a constant 7 mm below the level of the coverslip.
