According to the method of Xu and Chang (2008a, 2008b) with
slight modifications, black rice (20 g) were rinsed under running
tap water, and soaked in 100 mL of tap water at room temperature
for 24 h. Within the initial 6 h, the weight gain of sample was measured
hourly as water absorption (moisture content), followed by
each 2 h for determination over the next 10 h.
