MAG gel was structured by vigorously mixing a hot (75 °C)
oil-monoglyceride solution with alkaline deionized water by using
an immersion hand blender and a static mixer.The oil solution
containing melted monoglyceride and stearic acid was slowly added
to the alkaline deionized water solution. An immersion hand blender
was used to create a pre-emulsion of the oil/water system. A static
mixer was then utilized create the MAG gel from the pre-emulsion
system.
