T. cordifolia leaves were procured from a local garden in Mysore and the specimen of T. cordifolia has been deposited in the Fruit and Vegetable Technology (FVT) department of Central Food Technological Research Institute, Mysore-570 020. The voucher specimen no. is FVTDH No. LGBCL-TC-7A and & B/2010. The leaves were washed with distilled water and dried in an oven at 50 °C for 7 h. The dried leaves were coarsely powdered in a blender, passed through 250- μm sieve, coded as DTLP and stored in polythene bags of 250 gauge (water vapor transmission rate: 6 g/m2/day under 90%RH gradient at 38 °C; oxygen transmission rate: 2500 cm3/m2/day/atm at 65%RH/27 °C).
