The remaining two batches (consisting also of untreated controls –B1– and samples treated by HHP –B2–, in duplicate) were stored at 22 °C, with sampling at days 0 (immediately to treatment), 1, 3, 7 and 10. The pH of brines was measured with a pH meter (Crison Instruments, S.A., Barcelona). Gas production (swelling of bags) or abnormal odor was annotated at each sampling point.
