Recently this concern has been increasing in the country since other successful examples can be
observed in different parts of the world and our consumers are becoming more demanding for food
diversity and quality. Extrusion cooking technology is increasingly being used for the development of
food ingredients in order to promote the use of industrial wastes [12, 13].
In order to utilize valuable components of the broken rice and the aged split bean grains, which have
low commercial value, to produce different bakery products, this study aimed to investigate the addition
of a rice and black bean pre-gelatinized flour by extrusion on cookies formulations, composition and
acceptability.
