apples consists of the linear model of the first drying period followed
by the theoretical model of the second drying period.
The course of the drying process in the first drying period is
determined by the external conditions of mass transfer. If the
assumption is accepted that the shrinkage can be neglected the
first drying period is described by linear model [48].
