3. Results and discussion
3.1. DGGE profiles of AAB strains
DNA from the AAB strains was successfully amplified with the primers WBAC1–WBAC2GC which targeted the V7–V8 regions of the 16S rDNA and produced amplicons of approximately 330 bp. This primer set is not specific for AAB, as it was originally designed on the Lactobacillus plantarum 16S rDNA gene sequence, and can amplify 90% of the Acetobacter aceti subgroup and 75% of the gram-positive bacteria ( Lopez et al., 2003). However, the probability to find bacteria, other than AAB, is extremely low in vinegars, due to the extremely selective chemical conditions of this substrate.
