Pine nuts, which are the seeds of a Mediterranean pine tree, have a softish, oily texture and an attractive, delicate flavour. You can toast the pine nuts in a variety of ways. Spread them on a baking sheet and toast in the oven of under the grill (broiler) for about 5 minutes, shaking them frequently.Altematively, put the pine nuts in a dry non-stick frying pan and lightly toast over a medium heat, shaking often. Keep a close eye on them as they can over-brown very quickly.
