Rice is simply cooked by the electric rice
cooker while it is soaked for the certain period of time before
cooked with boiling water. After the complete cooking cooked rice
from a rice cooker needs to be washed (Luangmalawat et al., 2008),
but the washing step is not necessary in the case of the boiling
method since the cooked rice does not agglomerate (Carlson
et al., 1979). Then, the cooked rice needs to be dried to the certain
moisture content. There are many drying techniques to dehydrate
food. Different drying techniques, i.e., hot air and freeze drying,
provide the different food qualities such as flavor, color and texture
(Xu et al., 2006; Beaudry et al., 2004).
