The oxygen present in purees packed in PCPC came from the

Both KS and AA can help avoiding carotenoid destruction. The
KS content decreased as a result of its oxidative degradation by 10–
20% after 20 days of storage as it was observed in previous studies
(Gliemmo et al., 2006). Due to this, available oxygen diminished
protecting carotenoids from oxidation. Ascorbic acid is usually
added to foods to prevent development of oxidative off-flavors and
off-color, by reduction of the oxygen in the headspace (Liao & Seib,
1988; Zerdin, Rooney & Vermu¨ e, 2003). Choi et al. (2002) also
reported that AA exerts a stabilizing effect on carotenoids.
